Radis croquants, beurre de fanes à la moutarde aux fines herbes

Ingredients

  • Radish: 1 bunch
  • Butter: 80 g
  • Fine herbs mustard: 40 g
  • Salt

Recipe process

  • Wash the radishes with their tops.
  • Remove the leaves and cook them for 2 minutes in well-salted boiling water.
  • Drain and cool in very cold water.
  • Drain, squeeze between your hands, then mix finely. Place to dry on absorbent paper to remove all moisture.
  • Cut the butter into small pieces and soften in a salad bowl.
  • Add the fine herbs mustard and radish top pulp.
  • Mix well and place in a ramekin. Dip the radishes in this butter.
