Ingredients
- Large artichokes: 4 pcs
- Pommery® Old-fashioned mustard: 20 g
- Pommery® wine vinegar: 20 g
- Grapeseed (or peanut) oil: 40 g
Process of the recipe
- At the bottom of a pressure cooker, place the 4 large artichokes without the tails. Add cold water to the level and a little coarse salt.
- Close the pot and bring to the boil. At the whistle, count 12 minutes.
- Leave to cool. Make the dressing by mixing the old-fashioned mustard, wine vinegar, salt and pepper, and whisk with the grapeseed oil.
- Pour this dressing into the small artichokes.
- Eat the classic way by dipping each leaf in a bit of dressing to eat the tender parts.
- Arriving at the heart, remove the choke then eat the flesh well coated with dressing.
