Pommes Anna à la moutarde ancienne

Ingredients

  • Floury potatoes (Agria, Bintje, etc.): 1 kg
  • Butter: 80 g + 20 g
  • Pommery® Old-fashioned mustard: 80 g

Recipe process

  • Take 4 blini pans and brush with 20 g of softened butter. Wash and peel the potatoes.
  • Trim them with a knife to form a tube. Cut into 3 mm slices. Season with salt and pepper and add the melted butter.
  • Mix well . Make rosettes of potato slices at the bottom of each blini pan.
  • Add a layer of old-fashioned mustard, then finish with a rosette of potato slices. Pack lightly.
  • Heat the pans gently and start to brown the Anna potatoes.
  • When they are golden, turn them over and do the same on the other side.
  • Add melted butter if necessary and bake at 150°C if necessary to finish cooking.
  • At the end of cooking, the Anna apples should be caramelized and crispy, and soft in the center.
