Pistou de feuilles de moutarde

Ingredients

  • Green mustard leaves: 150 g
  • Pine nuts: 25 g
  • Garlic clove: ½
  • Dijon mustard: 60 g
  • Parmesan powder: 15 g
  • Grapeseed oil: 25 g

    Recipe process

    • Wash the green mustard leaves then drain them.
    • Cook them in a large pan of hot salted water for 4 minutes, then drain and cool in iced water.
    • Drain the cooked leaves then squeeze them between your hands. Place in a small blender and add the remaining ingredients.
    • Mix very finely, and adjust the seasoning with salt and pepper.

    This pesto is perfect for accompanying vegetable sticks, hot or cold pasta, seasoning salads, accompanying meat and fish, etc.
