Panisses à la moutarde ancienne

Ingredients

  • Chickpea flour: 100 g
  • Water: 150 g
  • Pommery® Old-fashioned mustard: 50g
  • Olive oil: 10g
  • Fine salt

Recipe process

  • In a saucepan, pour the chickpea flour and gradually dilute with water to avoid lumps.
  • Add the old mustard, fine salt, and olive oil.
  • Bring the mixture to a simmer, stirring constantly with a whisk to prevent it from sticking to the bottom. Continue cooking for 2 minutes.
  • The mixture should come away from the pan. Pour into a piping bag with a star tip.
  • Make sticks with the still hot appliance (be careful to protect your hands to avoid burning yourself).
  • Leave to cool in the fridge then fry in oil at 180°C. Eat hot and crispy.
