Ingredients
- Chickpea flour: 100 g
- Water: 150 g
- Pommery® Old-fashioned mustard: 50g
- Olive oil: 10g
- Fine salt
Recipe process
- In a saucepan, pour the chickpea flour and gradually dilute with water to avoid lumps.
- Add the old mustard, fine salt, and olive oil.
- Bring the mixture to a simmer, stirring constantly with a whisk to prevent it from sticking to the bottom. Continue cooking for 2 minutes.
- The mixture should come away from the pan. Pour into a piping bag with a star tip.
- Make sticks with the still hot appliance (be careful to protect your hands to avoid burning yourself).
- Leave to cool in the fridge then fry in oil at 180°C. Eat hot and crispy.
